Avocado Pasta

A friend of mine posted a photo of avocado pasta in Facebook and it looked so delicious. I haven't eaten avocado pasta before nor do I have an idea of how it tastes like. Here in Japan, they eat avocado as a vegetable. Avocado is commonly used in salads and sushi. Recently, I saw a TV ad of a pizza with avocado and avocado burger. What's with the avocado hype?

On the contrary, avocado is eaten as a fruit in the Philippines. As a child, I ate avocado with powdered milk and sugar. My mom used to make avocado popsicles and I always enjoy having avocado shake on a hot day. The combination of avocado and milk is heavenly. Well, it doesn't really matter whether avocado is a fruit or a vegetable; I love it just the same.

Moving on to our avocado pasta, here's what you need:

1 avocado, cubed
100 g pasta boiled according to package instructions
tomatoes, seeds removed and cubed
1 teaspoon olive oil
2 tablespoons lemon juice
1 tablespoon chopped spring onion
salt and pepper to taste
ham (optional)

Make sure your avocado is ripe enough. I actually used an avocado which was a little overripe but it turned out perfect. This is really as easy as 1, 2, 3. Just mash the avocado in a bowl until you have a creamy sauce. Add the olive oil, lemon juice then season with salt and pepper. After mixing thoroughly, toss the cooked pasta and tomato into the avocado sauce. 


Top with spring onions and ham. Ain't that easy?! The original recipe calls for grated garlic but I'm not a fan of raw garlic so I didn't use any. Makes 2 servings.
