Banana Pancakes

♫ Sunday morning rain is pouring...  It was already 8:30 AM and I was still in bed listening to Maroon 5 while imagining Adam Levine serenading me. I would normally get up early during weekends for my morning run but not today; it's cold and windy outside plus I have body pains which I probably got from yesterday's Frisbee game. I was planning to stay in bed longer but my tummy started growling. 

I made banana pancakes for this morning's breakfast. I actually learned this from a colleague who also loves to cook. 

Ingredients

1 cup all purpose flour
1 egg, beaten
1 large ripe banana, mash most of it but leave few slices 
150 ml, milk
1 tbsp melted butter

How to cook


Place the flour in a mixing bowl and add milk. Mix until the milk is incorporated then add the mashed bananas, melted butter and egg. Continue mixing until you get a good consistency. Heat your non-stick pan over low fire. When the pan is hot enough brush a little butter over the pan's surface then pour enough amount of batter. When little bubbles start to form it's time to flip the pancake. Cook until golden brown. It doesn't take a lot of time to cook one pancake, it would depend on how much batter you pour but it would normally take around 2 minutes. 

I don't add sugar in my batter because I don't like sweet pancakes. I don't like using maple syrup either. Today I used sliced bananas, orange marmalade and dark chocolates to top my pancake. The tangy flavor of the marmalade, the bitterness of the dark chocolate and the sweetness of the banana made this pancake my favorite version to date.



I don't drink milk so I asked my colleague next door to give me a cup of milk. In return, I gave him pancakes.
